June 9, 2004PUBLIC LIVES Brewing a Plain Old Favorite in BrooklynBy ROBIN FINN THE hulking, cone-shaped stainless steel tanks in this Brooklyn warehouse loom like missiles, but only a paranoid teetotaler could mistake their contents for weapons of mass destruction. What the tanks actually contain are ales and lagers, tens of thousands of gallons of the golden liquids, all patiently fermenting inside a former Borden's dairy plant reincarnated as a birthplace for adult beverages far more sophisticated than milk.
If this is Brooklyn, these must be microbrews, a k a boutique beers - but there's one historic, news-making exception. Plain old Rheingold is back home in the borough where it was born, after a 30-year hiatus. Nestled here among the trendy new brews is a freshly arrived antique whose secret recipe dates to 1883, the year it debuted.
Kelly Taylor, the laid-back brewmeister at Greenpoint Beer Works, wouldn't pound down a Rheingold if you paid him. Label him a beer snob, and Mr. Taylor, who presides over this three-man operation in cargo shorts, T-shirt and knee-high rubber boots, won't protest. He wouldn't touch a Bud, either. This cheerful fanatic swears that beer is more complicated than wine, and excitedly ticks off fragrant and exotic ingredients - wildflower honey, apricot nectar, strawberry juice, cardamom - that seem better suited to a perfume bottle than to a keg.
"Beer is an incredibly, incredibly complex beverage, more so than people give it credit for,'' he says.
But he's being paid to brew Rheingold, not reinvent it or, horrors, to guzzle it. Sips don't count. Mr. Taylor puts away a pint a day, tasting all the varieties he concocts, as a sort of business obligation: file it under quality control.
This month he has produced his first batch for Rheingold, which bases its brewing operations in Utica but, in a back-to-its-roots mode, wants to make and distribute a small amount of a special 1883 brew in the New York metropolitan region. Unless his scientific calibrations, and his taste buds, are fooling him, he and his equally laid-back assistants nailed it on the first try.
"I recognize that I'm a craft brewer, and my first instinct when they approached us with this deal was, 'But I don't want to brew Rheingold!' " says Mr. Taylor, 33.
He is sufficiently boyish to have trouble repressing a grimace when asked to evaluate Rheingold's ingredients, provided by an octogenarian brewer affiliated with the company. "It was like pulling teeth to get the recipe out of him," says Mr. Taylor, who finally won over the old-timer by sharing his own samples. Bonding over beer: how appropriate.
Mr. Taylor starts with a disclaimer: "It's a recipe I would never have put together, definitely the lightest beer I've ever brewed, not a lot of hops, and not one I would put my name on."
But profitability trumped prima donna-ism. It made sense to take on Rheingold; it meant breaking even after a year in business. And brewing a simple, mainstream beer was more of a challenge than Mr. Taylor had expected.
"I rationalized that it would be a very good exercise for us to see where our weaknesses are, because with this formula, there was no room for fluctuation," he says. "I tasted it, and it tastes like Rheingold. This 1883 recipe has a little more flavor, a little more alcohol than their regular beer. It's stronger, stepped up a notch."
Mr. Taylor gingerly taps into a 2,000-gallon vat of Farmer Jon's Oatmeal Stout, takes a sip, and pronounces it "almost done." Nice work if you can get it. He has been home brewing since he was 19 and used his college apartment in San Diego (he majored in international business at San Diego State) as his lab.
HERE he makes Cornhusker Lager, Red Rooster Ale and Summertime Apricot Ale, among others destined for the Heartland Brewery pubs in Manhattan. To call this stuff beer is an understatement: the brews are wildly adventurous, except for what's in Vat No. 7, which is headed elsewhere. That's the Rheingold. To each his own. Mr. Taylor also brews soda in black cherry and, duh, root beer.
Upstairs in the office, he parks himself on a castaway sofa. (All the furniture, even the barber chair and the piano, were foundlings from outside on Waverly Avenue.) The brewery's resident pest-control expert, a gray cat named Bad Andy, sharpens his claws on a rubber mat. Mr. Taylor has a mellower cat, Gelato, at home.
Mr. Taylor uses unfiltered New York City tap water for his microbrews. His newest is called Matrimony Ale. He and his fiancée formulated it - the malt is Belgian, and the yeast comes from California - for their wedding, July 4, in New Rochelle. He likens the ale to a light, crisp summer wine. "Believe me, nobody wants to come to my wedding and drink Bud Light."
Mr. Taylor grew up in a restaurant family in Mukilteo, Wash., 40 miles north of Seattle. His grandfather transformed a 10-seat diner into a 250-seat seafood restaurant, and all the Taylors worked there. He bused tables at age 10, worked in the kitchen in his teens, and after college returned home and worked for the mayor, a former line cook in his family's restaurant who had opened a pub and brewery.
After working for several West Coast breweries, Mr. Taylor moved to New York City and took a job with Mitsubishi International. Within two years, he missed making beer. He showed up at Heartland Brewery in Union Square with his resume wrapped around a bottle of homemade brew - his Honey Porter - and was hired on the spot. In January 2003 he became director of brewing operations at Greenpoint Beer Works, renovating this site to his specifications.
He isn't worried that carb-phobia will hurt the future of his favorite product, saying: "I'm not really concerned that the Atkins diet is going to do away with a 12,000-year-old beverage."

In Albany, particularly at Valentineís, there was no safe place to stand where you wouldnít be kicked or punched or jumped on. That might have been one of the reasons there were no misfits at Albany hardcore and metal shows. I found much more solace in Albany shows because hipsters didnít show up. These people want nothing to do with the dancing or the crowd. They stand apart or on the backstage platforms in a sad attempt to look like they belong.

actually, thanks to my old job, I ate lunch a few times in Tao which was on that show a few times (one time I went, $3K went on the corpo plastic):

Telephone: 001 212 888 2288 When you set eyes on the 16-foot high Buddha in the front dining room, you realise you're in for something special. Next door to the magnificent Four Seasons Hotel, it's a former theatre space that's suitably big on drama and superbly dramatic on drinks. True, the smooth-talking city types in name-label suits who flock in here probably wouldn't know a theatre from a thimble, but then this is post-modernism and New York is the master at it. The space is spread over three floors, with two Pan-Asian cuisine dining areas looking down on the folks in the bar below. Forgo the food though and hit the cocktails: quirkily-titled specials like the Absolut-based tao-mopolitan which should send you on the path to everlasting enlightenment. At least until morning.

This place is awesome!! I went for a friend's birthday and we were given one of the best tables in the place - right next to us was a table with about 15 models around it. My friend got a bit pissed in the end saying she thought she might as well not be there with all the attention I was paying to the models. I couldn't help it though! Absolutely LOVED Tao.. drinks were strong, cool crowd, buddha rocked, the wasabi crusted steak was one of the best meals ever, staff were efficient and not too full-on. Well if you want to eat it's great with loads of room, but if you're a smoker stay downstairs where it's cramped. Upstairs for the non-smokers it has more room but right at the back of the restaurant. The place isn't exactly buzzing, but it's not a bad crack. Overall not a bad place. Went to Tao bar upstairs with my husband the Friday of Thanksgiving week. If it wasn't for the Buddha, I would have thought I stepped into a casting call for The Sopranos. I visited Tao during NY's fashion week. The cocktails were well presented and the staff coped well even though the place seemed well over capacity. The evening, including food was fantastic and even though slightly the worse for wear I managed to take one of NY's finest back to my hotel... As a design architect, I must say TAO is pleasing to the senses in every way. My only gripe is that drinks are more expensive than the entertainment budget will allow for the average Joe. You either drink or eat there, but you'll find it hard to do both. And that's a shame cause I know most of you would like to eat and drink there more often once you've tried it. I've been in NYC for two years now and Tao is the closest to a 10 out of 10 I've seen yet in terms of atmosphere. If your looking for quaint or cozy, then go to the village. This place is for the posh and chic. Its lack of cover allows for pretenders, but they're easily spotted here. My advice, start your saturday night at Tao, and you won't be disappointed. Despite the dodgy name, Trampus is Taotally on the ball about this place. Full of old men letching after drab girls perching on bar stools like buzzards. Having been informed that Tao is the hot spot in NYC we were, to say the least, thoroughly disappointed. Where are the beautiful and stylish people?? The best thing about the place is the Golden Budha and the Exit sign. The type of people of go there are over weight pseudo rich men who need hair transplants and liposuction as for the women they have all been hit by the ugly stick. Need I say more. We have partied in europe, south east asia, far east and Tao just does not cut the mustard. Have not eaten there yet but we will sample the delights of Tao. Our expectations were not fulfilled. Ambience is 2 out of 10, crowd 4 out of 10. One thing good about Tao were the Cosmos - they are worth a try. I posted that on the board, and my friend read it from a newssite (absolutepunk.net). However, that site is full of rumours (although most of them turn out to be true), so it's not "official news" until it is posted on this site, I suppose.
And if you were talking about me as one of the "mindless" kids, way to be blind. Here's the situation: if YOU were driving down a 4 hour show to see one band (in your case, TFT), and you knew that Saves the Day were headlining that one show, wouldn't you too, be absolutely happy if STD drops the tour? Of course you would because that means that your band will get a longer set.
If TFT weren't going to headline the Seattle show and they cancelled, I'd be a little disappointed because I really did want to check them out live. As much as I like(d) SDRE, I never got into TFT, so maybe seeing them live would change my opinion. But that's not the case: the fact that TFT were going to headline equates to my favourite band getting less minutes. The fact that TFT might not play my show equates to my favourite band playing for longer. It doesn't get much more simpler than that.

Well, best of luck to Jeremy and the whole band. Though I'm sure a hand full of people are going to be angry about this, trust me, they'll get over it! This marks the lowpoint in TFT's touring history but, hey, it happens.

Marijuana is a bronchial dilator, whereas nicotine is a bronchial constrictor. I'm not sure if it makes much of a difference, but doesn't it make sense to think that marijuana might aid in one's singing abilities...at least while one is under the influence of THC? Just a thought.
Another thought: while a joint is worse than a cigarette (in terms of carcinogens), the typical cigarette smoker may go through a few packs a day. The typical stoner doesn't smoke nearly as many joints in a day. Most of the people I know who smoke pot (but not cigarettes) don't smoke more than two or three joints a day--in fact, some days they don't smoke at all. So I would say that cigarette smoking is worse because of the lifestyle that come with it (and that lifestyle is a product of the fact that cigarettes are chemically addictive, but marijuana isn't).

I smoke more pot then I do cigs and I will tell you right now that it doe smore to my vocals then then cigs. Cigs only come out when i get drunk(which i am right now). Like I said before, I know many singer that smoke loads og cigs and they sound fine. Its the screaming that fucks his voice up, that shit hurts and is not good. Personally,and this will be disagreed on, I think cigs make some people voices sound better.

regarding cigarettes, marijuana, alcohol and caffeine:
cigarette smoke is a potent irritant due to the heat and the toxins contained within it. it causes your throat to become inflamed and swollen in your body's efforts to heal the damage that was done. and while marijuana doesn't contain the nicotine in cigarettes, it's still smoke, and smoke you typically inhale without any filter whatsoever. contrary to popular myth, lung cancer is the least of any smoker's worries. smoking makes allergies and asthma a lot worse. because it destroys your body's natural way of transporting cleansing mucus out of your airways, it makes people much more prone to respiratory tract infections (which equal more cancelled gigs). but what will doom most smoker singers in the long run is emphysema. how can anyone sing when even breathing silently feels like gasping for air through a coffee stirrer? 25 pack years is the point when most people are at high risk for lung damage. (a pack year is the number of packs per day times the number of years you've smoked that much. so a person who smokes 1 pack a day for 25 years is at equal risk for disease as someone who's smoked 2 packs a day for 12.5 years.) of course, there are variables, like how deeply a person inhales, not to mention genetics (some are just naturally more prone to certain lung diseases and cancers).
as far as drinking goes, alcohol dehydrates your throat when it comes into contact with it. in the long run, it also acts as a diuretic (makes you pee). caffeine also causes you to urinate. if you don't make it a point to drink extra water to compensate for consumption of these things, you will lose liquids, drying your throat and putting yourself at a greater risk for injury.
these are the facts. anyone with half a brain will tell you that these things are bad for most singing. granted, some singers are lucky enough to get by doing all these things, and sometimes to great excess. but it makes you kinda wonder how great they'd sing if they cut back or stopped altogether. now some people claim that these things help achieve a certain sound with their voice. female jazz singers use cigarettes to cause swelling of their vocal cords to achieve a lower range. but nearly everyone who does it will pay a price for that sound.

my guess is that, no matter how much he smokes, Jeremy's voice problem is mostly a function of his singing style. he does a lot of very upper register and head voice stuff which can absolutely kill your voice, especially when you're singing night after night in very small clubs where the stage sound is, ahem, usually less than ideal. the fact that Jeremy really pushes his voice in an emotional way doesn't help, either.
anybody who saw Audioslave over the last year or two knows that Cornell's voice was totally ravaged, especially compared to 10 years ago, and Cornell and Enigk have very similar deliveries (even if the result is pretty different). the classic "rock" voice is usually a baritone that is straining hard for the upper register, and that just kills a voice if it's done every night for months on end. FWIW, Monster Magnet just called off a whole leg of their European tour as a result of Dave Wyndorf blowing out his voice, so it's not like this is the first time this has happened to a band or to a singer.
I feel very fortunate to have caught the Detroit show, and it was pretty clear that Enigk's voice was killing him then (despite the fact that he sounded brilliant).

Its the style for sure. You can't sing like that for years and not expect some damage. I love it though. And beleive me Pinar, you can sing4e and smoke like a charm. You don't smoke so of course you will disagree with this. Until you are first hand you will not truely know. And weed is worse for the lungs then Cigs.

although some people feel them a lot sooner, most of the consequences of smoking are down the line. you can't know that for sure because you haven't smoked enough... yet.
and where did i say i don't smoke? does it even matter if i do or not? jeremy himself tried to quit at one point. he knows it's not the best thing for his health, even if it is helping him sing now. it's a big sacrifice he's making if he does indeed smoke to change his voice. but anyways, i'm not trying to lecture anyone here. you're all adults. if you love to smoke, smoke. just make sure you know the long-term consequences of what you're doing and how it may affect your voice in the future.
also, i agree that the singing style is probably the main culprit here. but it doesn't seem as though he's going to drastically change his style anytime soon because he likes the sound. so either he learns to like another sound, or he cuts back on touring. no other way around it.

This may be just me, but I don't feel the urge to go ape when I watch these guys play live. At most I'd be bobbing my head along to the music. I've seen these guys live three times and the vid of Sunny Day and to me, there music isn't the kind to go so wild you are flailing your arms and jumping up and down. I just like to be there and absorb their sound and show.

i've seen them 9, yes, 9 times in the past 1.5 years. i can say for certain that by far the best shows i attended were the ones where the audience went apeshit. you might think that the band doesn't notice us out there, but they do. and sometimes all it takes is like one person freaking out to make a difference. they just soak up our energy, be it negative or positive, and this colors their entire performance. now even if you personally don't feel the need to go crazy, don't you find it so much more entertaining when the band dances around on stage? when you see them smiling at each other? when jeremy breaks a string or will breaks a stick? you can even hear the difference most of the time. this tells you, wow!, they're not just playing the song, they ARE the song... of course not all the songs lend themselves to such insanity. i remember watching them just kinda standing there during "houses"- although it was highly amusing when contrasted with the chaos that erupted during "rubber bands" and the other faster pieces... kinda like thrash, flail, headbang... stand there and play cutesy music... thrash, flail, headbang again. haha.

I would've been going crazy at the Chicago show had they played it. Not lame crazy, but some kind of reactive crazy at least.
Pinar, we will go to a show together one day and we'll bump our asses together and it'll be grand fun.
Also, my friend went into labor early at a Henry Rollins concert. The baby lived and they named him Damian Rollins (not sure how they spell damian) but it was a rather panicky situation. Just kind of be careful. My friend also was using jasmine which is a uteran (spelling?) warmer or suppose to be anyway, so that probably had a lot to do with her going into labor early. Sorry, last poster made me ramble with this story.But you all have fun and cheer them on and let them know how much their music revs your spirits er...yeah, or some junk like that.

i can't move to seattle cuz i'm in the middle of my ed-jerk-ation in philly. i might be able to swing a rotation in your area during my fourth year. my dream is to do residency there in two years IF any program out there is stupid enough to have me, which i doubt. haha. but even if not then, i'm pretty sure it's where i'm destined to end up someday. too many weird coincidences telling me as much.

Just want to confirm that a DVD will be shot at the show in Seattle on Sunday. We're shooting with 7-8 cameras and recording multi-track live sound. So many bands are forming as melodic hardcore bands these days it just isn't funny. Not Only do they sound the same but they fail to deliver anything new and fresh apart from their appearance. The worst thing is that the media think it's the next best thing since sliced bread. Wether you have to be on ecstasy to like it or not has to be the issue that arrises to the mind.
Despite this there is always one band that sticks out and leads the pack of the circus. Florida based Poison The Well manages to do this quite successfully and in all honesty is probably one of the only bands to succeed in this particular genre.
Although many bands are trying to follow what Poison The Well has established thus far, it has to be said that PTW are not one of these bands that are trying to succeed in this current trend of jading the 'emo' term just that little bit more. After all the argument of this band starting the concept of dirty denims, black T-shirts, and screaming with break down of melody is a strong one as coming out victorious is highly possible in a nerdy debate situation.
On the back of two records at the end of 2002, things were cruising along for the Florida born quintet. Heaps of touring and a fluctuating fan base saw the band sign to a major label (Atlantic/Velvet Hammer) and in June saw the band unleash their major label debut "You Come Before You", which in fact holds an intriguing title. "Absolutely just because it was such an important piece of music to us. We felt the title should really communicate the emotion of the record." band guitarists Ryan Primack says.
Now a title of a record is one thing, but the final product is another and with a major label debut often bands tend to get a little stage fright of the big time and crumble at the knees when the big wig barks. "I am the happiest I have ever been with a record. I really feel like we did something different." Primack says."Everyone was really cool and just let us do what we do. It was really rad to be honest with you. Besides that even if there was (any label influence) we would just ignore them anyway."
Recording majority of the album in Sweden was just another occurrence out of the inner-circle that these guys managed to pursue. Recording with the great duo of Pelle Henriccson and Eskill Lovstrom is something that bands don't do everyday so when the opportunity arrises it's a case of grabbing the opportunity with both hands and not letting go.
"It was definitely the greatest experience of my life. They are such talented people. They brought such a good element of wisdom to the record." He continues."Sweden was a destination by default. Pelle and Eskil are from there so that's where their studio is. It just made sense to record where they were the most comfortable. We got to do half of it in LA and then half in Sweden. It was just the most sensible to finish where they were relaxed and at home." Primack said.
With producers of that stature on board many followers had the gut instinct that this time around was going to be a different sound and edge compared to previous PTW outings. The instinct was one that failed to wash away, as a more polished and larger sound was at the helm of YCBY, even though Primack wasn't so sure about that judgement.
"Really you think so. I know for sure this is the noisiest and most chaotic record we've ever done. I think its the rawest outing yet. But I mean the difference is that with this record were hoping to get on a couple of Wal Mart soundtracks. Sorry that's sarcasm." He says jokingly.
The jokes don't stop there. Interesting track titles such as 'Zombies Are Good For You Health' also seemed to crop up on this outing and although it's something not to take all that seriously it has to hold meaning to it, after all where not dealing with fucking popstars here, were dealing with a band that have gained respect from The Deftones and Killswitch Engage as well as others.
"Yeah for sure I think Jeffery really set out to communicate something with the titles that sort of encouraged the listener to take their own interpretation of the lyrics." Primack said.
As Poison The Well's fan base continues to increase throughout Australia "You Come Before You" will see a earlier release then their previous two outings, which comes as a result of the band being on a major label as well as increased fan base as mention above.
"Yeah totally cause now we could probably get some financial help to get over there. We have always paid for everything right out of our pocket. "We can catch some waves or something. I hear the surf there is amazing." He says.

my sister lives near the town in PA where they make Utz chips. it's one of the most depressing places in PA (which is saying something considering that the state has Johnstown & Chester & that town w/ the coal-mine fire that's been burning for 50 years).

when me and a couple friends were about 15, we watched a show on tv where they toured the utz (which we had never heard of -- WEST COAST, BIOTCH!!) factory, showing off its various functions, with me and one of the others sitting back and making all sorts of "i love to lick the salf off of utz" "i could fit a whole sack of utz in my mouth" etc jokes, until the third friend was like "THAT'S ENOUGH, GUYS!"

UTZ has always been so ubiquitous around here (MD) that "hipster food" and "white trash chips" are kind of weird, annoying things to hear.
