i made chicken for my parents tonight, marinated overnight in yogurt and a shitload of curry spices and kosher salt. grilled kebab-style and served with a sauce of pureed tomato, cucumber, more spices, and a touch of cream. side dish: quinoa with diced red, orange, and yellow peppers and a bit of saffron. i love big kitchens.

here you go. for one two-layer cake or one 9"x13" sheet cake:

1lb powdered sugar (1 box, basically)
1/2 cup butter (i think that's 1 stick, but double-check. for amazing frosting, use nice european butter instead of land-o-lakes.)
3-5 tbsp of milk (whole is good) depending on desired consistancy.
1-2 tsp of vanilla

soften the butter, then cream it in with the sugar. add liquids gradually, and beat until smooth.

bonito is a fish but it's really prone to worms so you probably never should it eat raw but it usually comes seared it or cured (like mackerel). the flakes are chunks of fish that have been dried, salted and shaved off.

i had some excellent tuna tonight, too; one of my dad's friends went on a deep sea fishing trip and brought back 4 tuna. there are maybe 50 lbs of it in the fridge.

Okay, now I wasn't cooking (but I did assist in cleaning/dishes) but my good friend Jen invited me to her parents' house for a traditional Autumn Moon feast. I just have to share the menu with you guys:

1st Course:
Clear broth egg soup with carrot, chive and apple chunks.

2nd Courses:
Peel and eat prawns with soy/chive dipping sauce
Sea bass tail with ginger sauce
Whole crab (including head cracked open to allow for "brain flavor")

3rd Courses:
Baked glazed chicken wings
Roast duck with plum sauce
Barbeque marinated pork
Chinese broccoli

4th Course:
Mooncake with egg filling

It was really amazing, her mom is an awesome chef. It was an honor.

But one day all the suns appeared together and began to scorch the earth. An archer named Hou Yi saved the earth by shooting down all but one sun, and he threatened to eliminate that one as well. This archer then stole the "Elixir of Life" from a goddess and tightened his control over the country. The archer's beautiful wife, named Chang Er, drank the elixir in order to save the people from her husband's tyrannical rule. After drinking the elixir, she became light and floated upwards to the moon. Hou Yi loved his wife so much, he didn't shoot down the moon and ended his oppression. The moon festival was celebrated since that time in honor of Chang Er.

Mooncakes were made popular during the Yuan dynasty, when China was ruled by Mongolians. Rebels, knowing that the Autumn Moon Festival was drawing near, ordered the making of special cakes. Inside each cake was a message with the outline of a planned attack on the Mongolians. On the night of the Moon Festival, the rebels attacked and overthrew the Mongolians, establishing the Chinese Ming dynasty. Moon cakes are still served during the festival to commemorate this victory and the restoration of Chinese rule. The round "moon cakes" are also symbolic of family unity and closeness.

Moon gazing is another important part of the festival. On this day the moon is at its brightest and is a time for lovers to appreciate their togetherness. It is a quiet holiday characterized by peace and elegance. The Moon Festival is celebrated on the 15th day of the eighth lunar month."

tonight i made cheese & lamb quesadillas with homemade salsa.

salsa = tomatoes, lemon juice, garlic, onion, habanero & jalapeno peppers, cilantro.

sauteed ground lamb with garlic & cumin & cayenne pepper. put between tortillas w/ cheddar cheeze. top with salsa. cut in half or quarters. eat like pizza with salsa toppingz.
