i've been addicted to this stuff since discovering it in a sausage sandwich at my favourite pub last year; is there anything that goes better with sausages, or with brie for that matter? best i've ever had = the stuff i had in boston which also had roasted garlic in it (why didn't i bring any back?). worst = the stuff i got in waitrose the other week - where should i be getting it?

Make it yourself old boy, it's just a question of cooking onions for a long time on a very low heat to caramelize them, add your smoked garlic and Bob's your mother's brother. A little sugar in there helps the caramelization process along.

Its very easy to make, thro in some garlic shallots and cardamoms to set ti off nicely, a little brown sugar to initate the caramelisation and a little water, teaspoons, helps as well after inittial browning. Howeevr good supplies of ready made can be had from Villandry on great portland st.

How about the vinegar? Any preferences? Sherry vinegar sounds good. I want some of this stuff NOW.

Shery very good, balsamic can work but can also be overpowering. A good cider vinegar sets it off nicely.
