There are lots of great B&W pirate movies, but most of the ones of the last 30 years have been pretty bad. Polanski's one was fairly crappy despite Walter Matthau.
The last version of The Count of Monte Cristo was pretty good (has pirates in it and I really really liked it the first time, not so much the second though) as long as you meet it on its own terms and don't expect anything to resemble the book too much.

The Crimson Pirate (with Burt Lancaster, a former acrobat, doing his own stunts!)
The Black Swan was also pretty good.

Pirate movies always had the best titles.
