The Danish Blue is more immediate and tangy, but there's something subtler about the Stilton.

yes, also the brown crust on Stilton is very important.

Stilton all the way. I am a cheese fanatic (I wonder sometimes if I'm lactose *dependant*), and although Danish blue is nice, Stilton rules. I used to hate it as a kid since my dad always had it around and I thought it smelled like dirty socks. OK, it does smell bad, but stick a piece on a wedge of apple and MMMMMMMMMM

And if you are in London, I recommend the Stilton from Paxton&Whitfields on Jermyn street. Or also Neil's Dairy in Covent Garden. Hmmm, I'd love to attend a "Stilton-off": P&W v. Neil's Dairy!

mmm, Colston Bassett is the one they do at Neal's Yard and it's great.

I got quite into Shropshire blue over xmas, previously I hadn't liked it's very yellowness, but it tastes great.

I really want to try Blue Vinny
