Why do these establishments operate their business chaotically?

Tell me a story of your favorite haunt with the most unpredictable hours of operation.

one of the better band venues in melbourne advertises that it's open every day from a certain time but on at least five occasions i can recall, it's either just not opened at all on a given day, or 2 - 3 hours later than advertised. does that count?

Takeaways that are only open till 6 in the evening (except at weekends, which in the case of the one across the road means Thursday to Saturday) make me a bit cross sometimes.

There was a bar on haight street that used to open whenever the owner bothered to come by and set up shop. in fact, tracer hand was a client during his visit to SF as evidenced on this thread:

there's also a grocer (well, more a liquor store) who is open whenever the hell he wants about a block from me.

they're obviously not "in it for the $$$"... what gives?

Search: Jersey City's Iris Records -- apparently only open on Fridays from 3pm-9pm.

there's a fabric store in olympia which i only ever saw open around 11pm on a satuday night

twenty-two years pass...

There's a record store in my neighborhood that constantly frustrates me because it never seems to be open when I try to go there. I was never able to get a read on what their actual hours are. So finally I googled it, and these are their listed hours:

Sunday 11am - 6pm
Monday Closed
Tuesday 1pm - 7pm
Wednesday Closed
Thursday 4pm - 7pm
Friday. 2:30pm - 7pm
Saturday 3pm - 8pm
