Around here, andouille is code for "ass blaster." I'm glad to know andouille made/bought closer to N.O. tends to be less spicy-hot but just as tasty.

creole food is my fave. dooky chase in the treme area of new orleans is a fantastic place. i've had good cajun stuff in the lafayette, la. area. it's country cookin' to the more sophisticated creole style. basically, louisiana is a place where you can eat with confidence. but i've had some bad meals out along US 90 in the morgan city area. and just about never had a bad meal at any price in new orleans.
