1. chicken breast with no bone. either cutlets or the whole thing or whatever you want, doesn't matter. just no bone.2. sriracha chili sauce (you know, with the rooster on it).3. curry powder.4. soy sauce (preferably some of the good kind that is a little thicker and has some seasonings in it).5. teflon coated frying pan.6. small bowl.7. basting brush.
Mix like one tablespoon of the soy sauce, one tablespoon of hot sauce, and like a teaspoon of the curry powder all together in the bowl. Depends how much chicken you have to cover I guess. I never use real measures for anything anymore.
Cover both sides of the chicken with the sauce. Heat up the pan, medium to high heat, and throw the chicken on. While cooking, flip the chicken over a few times and re-baste with the brush. You want to keep it sort of the same color the whole time, both sides. Stick a fork in it, make sure it's done, serve with rice or salad or whatever floats your boat.
xpost kosher salt and garlic pepper for the asparagus, glaze with extra virgin olive oil and bake in oven on pan until crisp!
