Tofu Scramble recipes?

I'd discovered the excellence that is tofu texture after an overnight freeze and a subsequent flash-thaw...(spongey.. mmmm). So, I want to poll TEH VGEGIE MAHSSIF about tofu scramble recipes they've known and loved... specifically spices used in the tofu part.. curry powders, spices, and what not.

red onions
mushrooms

i sort of guess what spices to use every time, usually coriander, cumin, curry powder, and chili powder. use a little salt and pepper. i also use turmeric for color (not too much). tofu scramble is pretty hard to fuck up, you don't even need a recipe!

I am not a vegetarian at all, but I have enjoyed the occasional Tofu scramble!

My scramble is:

1 extra firm brick of tofu
equal parts cumin and tumeric (to taste)
1 jalapeno, diced

cook this up, and then at the last minute, add:

handful of spinach

and then just before you serve:

handful of pine nuts or sesame seeds.

it's a pretty simple dish, which I usually serve with home fries.

i used to add a 1/2 cup or so of good fresh salsa too, just at the end. Lots of turmeric, etc. too.

My recipe:
Grate a pound of carrots. Saute in a couple of tablespoons of peanut oil for about 15 min., stirring frequently. Crumble in a pound of extra-firm tofu. Keep stirring and frying for another 5 min. Add 1/4 cup soy sauce and 1/3 cup sesame seeds. Stir for 1 minute. Stir in a teaspoon of dark sesame oil and turn off the heat. Serve over white rice.
