ive had soy milk long past the exp date and it was fine. but it probably depends on how cold your fridge is, etc.

AaronK (AaronK), Monday, 15 May 2006 14:05 (twenty years ago)

I find that soy milk gets clumpy before it actually goes off. So as long as the milk is still liquidy-smooth, it's probably fine.

Expired food with no meat/eggs is pretty much always fine if it passes the taste test. If it tastes OK it won't give you the shits or anything. You can taste veggie food spoilage and even fermentation is usually OK (fermented soy = tempeh, fermented fruit = wine). Mold is the point where it turns inedible, but meat bacteria can be toxic and tasteless. Dairy's OK too (cheese & yogurt = already spoiled you know?)

yeah i made a salad with some fermented tofu a while back and it was pretty good! the soy milk just tasted really metallic and bitter (cue 'how can you tell?' jokes)

Or is it more "I know you can't make an omelette without breaking eggs, but I choose not to watch"?

Alba (Alba), Monday, 15 May 2006 22:58 (twenty years ago)

I have no idea. It's a still from a Russian (?) movie, I think, but I don't remember how and where I found it.

I think soy milk may contain histidine which can turn to histamine in sspoiled oofd. like in fish.

Mr Jones (Mr Jones), Tuesday, 16 May 2006 06:27 (twenty years ago)

2. You perform a series of experiments in which you plate proteins purified from soy beans along with the his- bacteria on minimal medium. You find that the bacteria grow on almost all of the plates. Does this mean that soy bean proteins are mutagens, or is there another explanation?

Most proteins contain histidine. When these proteins are broken down, they can be a source of histidine, thereby enabling the bacteria to grow.

histadine turns to histamine wich when eaten = food poisoning
