Vince Guaraldi is good, subtle Christmas music. I'm having a holiday party soon, thinking about what to play, and I think I'm going to put on Steve Reich's 'Music For 18 Musicians'.
I often put Kraftwerk's 'Tanzmusik' in Christmas mixes. Classical-sounding music with bells and chromatic instruments are a big part of what makes music sound 'Christmasey'. If anyone has anything else in this vein, I'd be interested to hear it.
Stereolab's 'Speedy Car' is a good one too.
