Is there a song older than Cotton Eye Joe that is still popular? I just watched a bunch of kids dancing to an electronic version of this jam that is over 170 years old

Apart from nursery rhymes you mean?

"Greensleeves" comes to mind. That's from 1580 at the latest.
There's a bunch of Stephen Foster songs from the 1850s that are still beloved, such as "Camptown Races," "Old Folks at Home" (aka "Swanee River"), and "My Old Kentucky Home." Foster's "Oh! Susanna" goes back to the 1840s.

The lyrics of "My Old Kentucky Home" have to be tweaked, mind you

Beethoven's Fifth is over 200 years old, dance versions of which (Walter Murphy, Robin Thicke) can still reliably fill the floor.

"Auld Lang Syne" has been around for a while and seems as popular as ever.

A host of Christmas carols, of course

I guess I'm thinking of popular music. Songs that kids know and get excited about and they don't even realize it's old.
Beethoven's Fifth is a good one.

Korobeiniki feels like it will be covered and remixed forever. There was a huge hit in Japan last year, I think, based on it.

Chopin's Prelude No. 4, written in the 1830s, has been interpolated into numerous popular music contexts. Wikipedia has a long list of them:

Pachelbel's Canon, 300+ years old.

arirang, the unofficial national folk song of both koreas, beloved by literally every single person who's ever been anywhere near south or north korea, not to mention every single person who's ever even thought about k-pop, is generally believed to be 600 years old (though some historians, to be fair, think it may be only about 300 years old).
